We are halfway into February and rapidly approaching the beginning of spring. We literally skipped winter in this part of New Mexico.

This month’s issue celebrates healthy ethnic cuises, the benefit of spices, and how to recycle and use the parts of fruits and vegetables we normally would discard. We give you a glimpse into the origin and philosophy of five different country’s diets and share recipes and secrets about how their residents keep healthy. Around it we sprinkle tips from local experts about spices, and recipes for making your own curry and vegan chocolate mousse. Enjoy!
